Ingredients
- 1 cup (200g) cooked red beans (canned, rinsed, and drained)
- 1/2 cup (120ml) full-fat coconut cream
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup (25g) grain-free granola
- 2 tablespoons (15g) unsweetened toasted coconut flakes
- Pinch of sea salt
Instructions
- Prep: Rinse and drain canned red beans thoroughly. Preheat oven to 300°F (150°C).
- In a small saucepan over medium-low heat, combine the red beans, coconut cream, maple syrup, vanilla extract, and a pinch of sea salt. Stir well.
- Simmer gently for 5-7 minutes, stirring occasionally, until the mixture slightly thickens and the flavors meld.
- While the bean mixture simmers, spread the grain-free granola and unsweetened coconut flakes on a baking sheet.
- Toast in the preheated oven for 5 minutes, or until lightly golden and fragrant. Watch carefully to prevent burning.
- Divide the warm red bean and coconut cream mixture between two serving bowls.
- Sprinkle evenly with the toasted grain-free granola and coconut flakes just before serving.
