Paleo Prawn & Halloumi "Toast" with Avocado

Ingredients
- 4 oz (approx. 115g) raw prawns, peeled and deveined
- 3.5 oz (approx. 100g) halloumi cheese, sliced into 1/4-inch thick pieces
- 1 medium avocado, ripe
- 2 cups mixed greens (e.g., spinach, arugula)
- 1 tbsp olive oil, divided
- 1 tsp lemon juice
- 1/4 tsp dried oregano
- Pinch of red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Prep: Pat prawns dry, season with salt, pepper, and oregano. Slice halloumi. Mash avocado with lemon juice, salt, and pepper.
- Grill: Preheat grill to medium-high. Lightly brush halloumi slices with 1/2 tbsp olive oil. Grill halloumi for 2-3 minutes per side until golden brown with grill marks. Set aside.
- Cook Prawns: In a pan on the hob, heat the remaining 1/2 tbsp olive oil over medium-high heat. Add prawns and red pepper flakes (if using). Cook for 2-3 minutes per side, until pink and opaque. Do not overcook.
- Assemble "Toast": Divide the mixed greens between two plates. Top each with half of the mashed avocado, spreading it to create a base.
- Layer: Arrange the grilled halloumi slices and cooked prawns on top of the avocado.
- Serve: Drizzle with a tiny bit more olive oil if desired, and serve immediately.
