Ingredients
- 300g extra-firm tofu, pressed and cut into 1-inch cubes
- 1 tbsp cornstarch
- 1 tbsp sesame oil (divided)
- 2 tbsp gochujang
- 1 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 clove garlic, minced
- 1 tsp grated ginger
- 1/2 tsp red pepper flakes (optional)
- 200g mixed greens (e.g., spinach, bok choy)
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp sesame seeds
Instructions
- Prep: Press tofu for at least 15 minutes to remove excess water. Cut into 1-inch cubes. In a bowl, toss tofu with cornstarch until evenly coated.
- Air Fry Tofu: Preheat air fryer to 200°C (400°F). Lightly spray tofu with 1 tsp of sesame oil. Air fry for 15-20 minutes, shaking the basket halfway, until golden and crispy.
- Make Gochujang Glaze: While tofu cooks, whisk together gochujang, maple syrup, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using) in a small bowl.
- Sauté Greens: Heat the remaining 2 tsp of sesame oil in a large pan or wok over medium-high heat. Add mixed greens and sauté for 2-3 minutes until wilted. Stir in soy sauce.
- Glaze Tofu: Once tofu is crispy, transfer it to the bowl with the gochujang glaze. Toss gently until all tofu pieces are well coated.
- Serve: Divide the sesame greens between two plates. Top with the gochujang glazed tofu bites and sprinkle with sesame seeds.
