Instructions

  1. Prep: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together maple syrup, tamari, rice vinegar, and ginger. Set aside half of the glaze for serving.
  3. Place salmon fillets on the prepared baking sheet. Brush generously with the remaining glaze. Bake for 12-15 minutes, or until cooked through and flaky.
  4. While salmon bakes, heat coconut oil in a small pan over medium heat. Add pecans, almonds, pumpkin seeds, and cinnamon. Toast for 3-5 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat.
  5. Thinly slice the apple.
  6. Divide salmon fillets between two plates. Sprinkle with the toasted nut granola. Arrange apple slices alongside. Drizzle with the reserved glaze.
  7. Top tip: For extra crispness, you can air-fry the salmon at 375°F (190°C) for 8-10 minutes instead of baking.
