Ingredients
- 2 (4oz/113g) salmon fillets
- 2 tbsp maple syrup
- 1 tbsp tamari (gluten-free soy sauce)
- 1 tsp rice vinegar
- 1/2 tsp grated fresh ginger
- 1/4 cup pecan halves
- 1/4 cup almond slivers
- 2 tbsp pumpkin seeds
- 1 tbsp coconut oil
- 1/4 tsp cinnamon
- 1 medium apple, thinly sliced
Instructions
- Prep: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together maple syrup, tamari, rice vinegar, and ginger. Set aside half of the glaze for serving.
- Place salmon fillets on the prepared baking sheet. Brush generously with the remaining glaze. Bake for 12-15 minutes, or until cooked through and flaky.
- While salmon bakes, heat coconut oil in a small pan over medium heat. Add pecans, almonds, pumpkin seeds, and cinnamon. Toast for 3-5 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat.
- Thinly slice the apple.
- Divide salmon fillets between two plates. Sprinkle with the toasted nut granola. Arrange apple slices alongside. Drizzle with the reserved glaze.
- Top tip: For extra crispness, you can air-fry the salmon at 375°F (190°C) for 8-10 minutes instead of baking.
