Ingredients
- 4 slices whole-wheat bread
- 1 cup shelled edamame (fresh or frozen)
- 1/2 ripe avocado
- 1 tbsp zhug (store-bought or homemade)
- 1 tbsp fresh lemon juice
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- 1 tbsp toasted sesame seeds
Instructions
- Prep: Preheat oven to 350°F (175°C).
- Cook edamame: If frozen, microwave edamame according to package instructions until tender. Drain well.
- Prepare Zhug-Spiced Edamame Mash: In a medium bowl, combine cooked edamame, zhug, lemon juice, cumin, smoked paprika, salt, and pepper. Mash with a fork or potato masher until desired consistency is reached (chunky or smoother).
- Toast Bread: Place bread slices on a baking sheet and toast in the preheated oven for 5-7 minutes, or until golden brown and crisp.
- Assemble Toasts: Evenly spread the zhug-spiced edamame mash over the toasted bread slices. Thinly slice the avocado and arrange over the edamame mash.
- Garnish: Sprinkle generously with toasted sesame seeds.
