Ingredients
- 100g gluten-free corn flakes (unsweetened)
- 200g raw prawns, peeled and deveined
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 tablespoon gluten-free soy sauce or tamari
- 1 teaspoon fish sauce
- 1/2 teaspoon Sriracha (optional, for a kick)
- 1 tablespoon olive oil
- Fresh cilantro and lime wedges for garnish
Instructions
- Prep: Rinse spinach and set aside. Mince garlic. If prawns are frozen, thaw and pat dry. In a small bowl, whisk together gluten-free soy sauce (or tamari), fish sauce, and Sriracha (if using).
- Heat olive oil in a non-stick pan or wok over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add prawns to the pan and cook for 2-3 minutes per side, until pink and opaque.
- Add spinach to the pan and cook until just wilted, about 1-2 minutes.
- Pour in the sauce mixture and toss everything to coat, cooking for another minute.
- In two serving bowls, divide the gluten-free corn flakes evenly. Spoon the prawn and spinach mixture over the cereal.
- Garnish with fresh cilantro and a squeeze of lime juice.
