Ingredients
- 300g lean pork loin, cut into 1-inch cubes
- 150g halloumi cheese, cut into 1-inch cubes
- 1 red bell pepper, deseeded and cut into 1-inch pieces
- 1 yellow bell pepper, deseeded and cut into 1-inch pieces
- 1 tbsp olive oil
- Salt and freshly ground black pepper to taste
- 2 tbsp balsamic vinegar
- 1 tsp honey (or maple syrup for vegan option)
- 1/2 tsp dried oregano
- Skewers (metal or pre-soaked wooden)
Instructions
- Prep: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 15 minutes to prevent burning. In a medium bowl, toss the pork cubes with 1/2 tablespoon of olive oil, salt, and pepper. In another bowl, toss the halloumi cubes with the remaining 1/2 tablespoon of olive oil.
- Assemble Skewers: Thread the pork, halloumi, and bell pepper pieces alternately onto the skewers, ensuring a mix of ingredients on each.
- Make Balsamic Glaze: In a small saucepan on the hob, combine the balsamic vinegar, honey, and dried oregano. Bring to a simmer over medium heat and cook for 3-5 minutes, or until the glaze slightly thickens. Set aside.
- Grill Skewers: Place the skewers on the preheated grill. Cook for 12-15 minutes, turning frequently, until the pork is cooked through and the halloumi and peppers are nicely charred and crispy.
- Glaze: During the last 2-3 minutes of grilling, brush the skewers generously with the balsamic glaze.
- Serve: Remove the skewers from the grill and let them rest for a minute before serving.
