Crispy Pork & Halloumi Skewers with Balsamic Glaze

Ingredients
- 300g lean pork loin, cut into 1-inch cubes
- 150g halloumi cheese, cut into 1-inch cubes
- 2 tbsp balsamic vinegar
- 1 tsp honey (or maple syrup for vegan option)
- 1 tbsp olive oil
- 1/2 tsp dried oregano
- Pinch of black pepper
- Wooden skewers (soaked in water if grilling)
Instructions
- Prep: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning. In a small bowl, whisk together the balsamic vinegar, honey, and a pinch of black pepper to create the glaze. In another bowl, toss the pork cubes with 1/2 tbsp olive oil and oregano.
- Thread alternating pieces of pork and halloumi onto the soaked skewers.
- Brush the skewers lightly with the remaining 1/2 tbsp olive oil.
- Place the skewers on the preheated grill. Grill for 10-12 minutes, turning occasionally, until the pork is cooked through and the halloumi is golden and crispy.
- During the last 2 minutes of cooking, brush the skewers generously with the balsamic glaze, allowing it to caramelize slightly.
- Remove from the grill and let rest for a minute before serving.
