Ingredients
- 1 tbsp olive oil
- 2 large red onions, thinly sliced
- 1 (15-ounce) can black-eyed peas, rinsed and drained
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika
- Pinch of cayenne pepper (optional)
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- Salt and black pepper to taste
Instructions
- Prep: Slice onions thinly and chop herbs.
- Heat olive oil in a large non-stick skillet over medium-low heat. Add sliced red onions and cook, stirring occasionally, for 15-20 minutes, until deeply caramelised and softened.
- Increase heat to medium-high. Add the rinsed and drained black-eyed peas to the skillet with the caramelised onions. Cook for 5-7 minutes, stirring occasionally, until the beans are heated through and begin to crisp on the outside.
- Stir in ground cumin, smoked paprika, and cayenne pepper (if using). Cook for another 1-2 minutes, allowing the spices to become fragrant.
- Remove from heat and gently fold in the fresh parsley and mint. Season with salt and black pepper to taste.
- Serve immediately as a satisfying and flavourful vegetarian dinner.
