Provençal Herb Waffles with Caramelised Onion & Vegan 'Pork'

Ingredients
- 1 cup (120g) all-purpose flour
- 1 tbsp (15g) sugar
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/4 tsp salt
- 1 tbsp dried herbes de Provence
- 1 cup (240ml) unsweetened plant-based milk
- 2 tbsp (30ml) olive oil, plus more for cooking
- 1 tbsp apple cider vinegar
- 1 large onion, thinly sliced
- 100g vegan 'pork' crumbles (e.g., soy-based or mushroom-based)
- 1 tbsp maple syrup
- Pinch of salt and pepper
Instructions
- Prep: Preheat your waffle iron. In a large bowl, whisk together the flour, sugar, baking powder, bicarbonate of soda, salt, and herbes de Provence.
- In a separate bowl, whisk together the plant-based milk, 2 tbsp olive oil, and apple cider vinegar. Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix).
- Heat 1 tbsp olive oil in a pan over medium-low heat. Add the sliced onion, a pinch of salt, and caramelize for 15-20 minutes, stirring occasionally, until deeply golden brown and sweet. Add 1 tbsp maple syrup during the last 5 minutes.
- While onions caramelize, cook the vegan 'pork' crumbles according to package instructions on the hob until crispy, about 5-7 minutes. Season with a pinch of pepper.
- Spoon 1/2 cup of the waffle batter into the preheated waffle iron and cook according to manufacturer's instructions until golden brown and crispy. Repeat with remaining batter to make 4 waffles.
- Divide the waffles between two plates. Top each serving with half of the caramelized onions and half of the crispy vegan 'pork' crumbles.
- Top tip: For extra flavour, sprinkle a pinch of fresh herbs like chives or parsley over the finished dish.
