Vegan Air-Fried Plantain & Black Bean Fry-Up with Salsa Roja

Ingredients
- 2 ripe plantains (approx. 300g)
- 1 can (400g) black beans, rinsed and drained
- 1 red onion, finely diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 cup vegetable broth
- 1 tbsp olive oil
- Salt and black pepper to taste
- For Salsa Roja:
- 2 large ripe tomatoes (approx. 300g), quartered
- 1 jalapeño, deseeded and roughly chopped (or more for spice)
- 1/4 red onion, roughly chopped
- 1 clove garlic, roughly chopped
- Juice of 1 lime
- Small bunch of fresh cilantro, chopped
- Pinch of sugar (optional)
- Salt to taste
Instructions
- Prep: Preheat your air fryer to 190°C (375°F). Peel and slice the plantains into 1/2 inch thick rounds or oblongs. For the salsa, roughly chop all salsa ingredients (tomatoes, jalapeño, 1/4 red onion, garlic).
- Air-fry Plantains: Arrange the plantain slices in a single layer in the air fryer basket. Air fry for 15-20 minutes, flipping halfway, until golden brown and slightly caramelized. Set aside.
- Prepare Salsa Roja: While plantains are cooking, blend the quartered tomatoes, jalapeño, 1/4 red onion, 1 clove garlic, lime juice, and a pinch of sugar (if using) until smooth. Stir in the fresh cilantro and season with salt to taste.
- Cook Black Beans: Heat olive oil in a pan over medium heat. Add the finely diced red onion and sauté for 3-4 minutes until softened. Add minced garlic, cumin, and smoked paprika, cooking for another minute until fragrant.
- Simmer Beans: Stir in the rinsed black beans and vegetable broth. Bring to a gentle simmer and cook for 5-7 minutes, allowing the liquid to reduce slightly and the flavors to meld. Season with salt and black pepper.
- Assemble: Divide the air-fried plantains and black beans between two plates. Serve with a generous dollop of fresh Salsa Roja.
- Top tip: For an extra kick, roast the tomatoes and jalapeño for the salsa in the oven for 10 minutes before blending.
