  1. Prep: Pat the white fish fillets dry and cut them into bite-sized pieces. In a small bowl, toss the fish with soy sauce and cornstarch. Prepare the chili, garlic, onion, fine beans, and Thai basil.
  2. Heat the olive oil in a large pan or wok over medium-high heat. Add the fish and stir-fry for 3-4 minutes until cooked through and lightly browned. Remove the fish from the pan and set aside.
  3. Add the sliced red chili, minced garlic, and sliced onion to the same pan. Stir-fry for 2-3 minutes until fragrant.
  4. Add the fine beans and stir-fry for another 3-4 minutes until they are tender-crisp. You can add a splash of water if the pan gets too dry.
  5. Return the cooked fish to the pan. Add the fish sauce (or vegetarian alternative), sugar, and water. Stir well to combine.
  6. Stir in the fresh Thai basil leaves and cook for 1 minute until they wilt.
