  1. Prep: Preheat your oven to 200°C (180°C fan) and line a baking tray with parchment paper.
  2. Place the chopped spinach in a microwave-safe bowl with a splash of water and microwave for 2 minutes until wilted; squeeze out all excess moisture thoroughly.
  3. In a mixing bowl, combine the squeezed spinach, ricotta, feta, minced garlic, lemon zest, nutmeg, and 1 teaspoon of the za’atar.
  4. Lay out one sheet of filo, brush lightly with olive oil, and stack another sheet on top (repeat until you have 3 stacks of 2 sheets each); cut each stack into three long strips.
  5. Place a tablespoon of filling at the bottom of each strip and fold diagonally into a triangle shape, repeating until all filling is used (3 triangles per person).
  6. Brush the tops of the triangles with the remaining olive oil and sprinkle with the rest of the za'atar.
  7. Bake in the oven for 12-15 minutes or until the pastry is golden brown and crisp.
