Spinach and Ricotta Filo Triangles with Za'atar

Ingredients
- 6 sheets Filo pastry (thawed)
- 200g Fresh spinach, chopped
- 120g Ricotta cheese, low fat
- 40g Feta cheese, crumbled
- 1 tbsp Olive oil (for brushing)
- 2 tsp Za'atar spice blend
- 1 clove Garlic, minced
- 1/2 Lemon, zest only
- Pinch of Nutmeg
Instructions
- Prep: Preheat your oven to 200°C (180°C fan) and line a baking tray with parchment paper.
- Place the chopped spinach in a microwave-safe bowl with a splash of water and microwave for 2 minutes until wilted; squeeze out all excess moisture thoroughly.
- In a mixing bowl, combine the squeezed spinach, ricotta, feta, minced garlic, lemon zest, nutmeg, and 1 teaspoon of the za’atar.
- Lay out one sheet of filo, brush lightly with olive oil, and stack another sheet on top (repeat until you have 3 stacks of 2 sheets each); cut each stack into three long strips.
- Place a tablespoon of filling at the bottom of each strip and fold diagonally into a triangle shape, repeating until all filling is used (3 triangles per person).
- Brush the tops of the triangles with the remaining olive oil and sprinkle with the rest of the za'atar.
- Bake in the oven for 12-15 minutes or until the pastry is golden brown and crisp.
