- 4 (4-ounce) lamb loin chops, bone-in
- 2 tablespoons fresh rosemary, finely chopped

- 2 cups broccoli florets (about 300g)

Instructions
- Prep: Preheat your air fryer to 400°F (200°C). In a small bowl, combine the chopped fresh rosemary, 1 tablespoon olive oil, garlic powder, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper. Rub the mixture evenly over both sides of the lamb chops.
- Air Fry: Place the seasoned lamb chops in a single layer in the air fryer basket. Cook for 12-15 minutes, flipping halfway through, or until the internal temperature reaches 135-140°F (57-60°C) for medium-rare.
- Roast Broccoli: While the lamb is air frying, toss the broccoli florets with 1 tablespoon olive oil, 1/4 teaspoon sea salt, and a pinch of black pepper. Place the seasoned broccoli on a baking sheet and roast in the oven alongside the lamb (if using an oven for the lamb, adjust accordingly) or air fry after removing the lamb, at 400°F (200°C) for 10-12 minutes, or until tender-crisp and slightly charred.
- Rest & Serve: Once cooked, remove the lamb chops from the air fryer and let them rest for 5 minutes before serving. This allows the juices to redistribute, ensuring a tender and flavorful chop. Serve the lamb chops immediately with the roasted broccoli.
