Ingredients
- 300g turkey breast, thinly sliced and pounded to 1/4 inch thickness
- 1/2 cup almond flour
- 1 large egg, beaten
- 1 tbsp olive oil
- 1/4 cup kimchi, finely chopped
- 2 tbsp mayonnaise (sugar-free)
- 1/2 tsp gochugaru (Korean chili powder, optional)
- 1 large cucumber, thinly sliced
- 2 tbsp rice vinegar (sugar-free)
- 1 tbsp soy sauce (low sodium)
- 1 tsp sesame oil
- 1/4 tsp erythritol or other low-carb sweetener
- Salt and black pepper to taste
Instructions
- Prep: Preheat air fryer to 375°F (190°C). Prepare two shallow dishes: one with almond flour seasoned with salt and pepper, and another with the beaten egg.
- Schnitzel: Dip each turkey slice first in the egg, then coat thoroughly with almond flour. Lightly spray both sides of the schnitzel with olive oil.
- Air Fry: Place schnitzel in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
- Kimchi Mayo: In a small bowl, combine chopped kimchi, mayonnaise, and gochugaru (if using). Mix well.
- Cucumber Salad: In another bowl, whisk together rice vinegar, soy sauce, sesame oil, and sweetener. Add the sliced cucumber and toss to coat.
