Ingredients
- 2 (4oz) salmon fillets
- 1 tbsp olive oil
- 1 tsp garam masala
- 0.5 tsp turmeric powder
- 0.5 tsp ground cumin
- 0.5 tsp ground coriander
- 0.25 tsp cayenne pepper (or to taste)
- Salt and black pepper to taste
- 2 cups cauliflower florets (riced)
- 1 tbsp fresh cilantro, chopped (for garnish)
- 1 lemon wedge (for serving)
Instructions
- Prep: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, combine olive oil, garam masala, turmeric, cumin, coriander, cayenne pepper, salt, and black pepper to create a spice paste.
- Pat the salmon fillets dry with a paper towel. Rub the spice paste evenly over both sides of the salmon fillets.
- Place the seasoned salmon fillets on the prepared baking sheet and bake for 12-15 minutes, or until cooked through and flaky.
- While the salmon bakes, prepare the cauliflower rice. Heat a large non-stick pan over medium heat. Add the riced cauliflower and sauté for 5-7 minutes, stirring occasionally, until tender-crisp.
- Divide the cauliflower rice between two plates. Top each with a cooked salmon fillet.
- Garnish with fresh cilantro and a lemon wedge before serving.
