Ingredients
- 1 cup shelled edamame, fresh or frozen
- 1 large carrot, grated
- 1/4 cup all-purpose flour
- 2 tablespoons cornstarch
- 1/4 cup finely chopped red onion
- 1 clove garlic, minced
- 1/2 inch fresh ginger, grated
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1/2 teaspoon chili flakes (optional)
- 2 tablespoons vegetable oil for frying
- For the dipping sauce:
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon maple syrup
- 1/2 teaspoon grated fresh ginger
Instructions
- Prep: Thaw edamame if frozen. In a large bowl, combine shelled edamame, grated carrot, flour, cornstarch, red onion, minced garlic, grated ginger, 1 tablespoon soy sauce, 1 tablespoon lime juice, sesame oil, and chili flakes (if using). Mix until well combined.
- Form the mixture into 8 small patties, about 1/2 inch thick.
- Heat 2 tablespoons of vegetable oil in a large non-stick pan or skillet over medium heat.
- Carefully place the fritters in the hot pan and cook for 3-4 minutes per side, or until golden brown and crispy.
- While the fritters are cooking, prepare the dipping sauce by whisking together 2 tablespoons soy sauce, 1 tablespoon lime juice, 1 teaspoon maple syrup, and 1/2 teaspoon grated fresh ginger in a small bowl.
- Serve the crispy fritters immediately with the tangy soy-lime dipping sauce.
- Top tip: For an even crispier texture, you can finish the fritters in an air fryer at 375°F (190°C) for 3-5 minutes after pan-frying.
