Ingredients
- 200g prawns, peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 100g fresh spinach
- 1/2 tsp smoked paprika
- 1/4 tsp cumin
- 1/4 tsp chili powder
- 100g cooked brown rice
- 50g black beans, rinsed and drained
- 50g corn (canned or frozen)
- 1/4 red onion, finely diced
- 2 tbsp chopped fresh cilantro
- 1 lime, juiced
- Salt and freshly ground black pepper to taste
Instructions
- Prep: Rinse prawns and pat dry. Mince garlic. Dice red onion and chop cilantro.
- Heat 1 tbsp olive oil in a pan over medium heat. Add minced garlic and cook for 1 minute until fragrant. Add prawns and cook for 2-3 minutes per side, or until pink and cooked through. Stir in spinach and cook until wilted.
- In a separate bowl, combine cooked brown rice, black beans, corn, diced red onion, cilantro, lime juice, remaining 1 tbsp olive oil, smoked paprika, cumin, and chili powder. Season with salt and pepper.
- Divide the rice mixture between two bowls. Top with the garlic butter prawns and spinach.
- Serve immediately.
