Ingredients
- 2 (100g each) whole wheat pitas
- 150g lean minced beef (5% fat)
- 1/2 small onion, finely chopped
- 1/2 red bell pepper, finely diced
- 1/2 green bell pepper, finely diced
- 1/2 tomato, deseeded and finely diced
- 1/4 cup chopped fresh parsley
- 1 tsp paprika
- 1/2 tsp cumin
- Pinch of red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tbsp fat-free Greek yogurt (for serving)
- 20g reduced-fat mozzarella cheese, shredded
Instructions
- Prep: Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
- Heat a non-stick pan on the hob over medium heat. Add the lean minced beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add the chopped onion, red bell pepper, green bell pepper, and tomato to the pan. Cook for 5-7 minutes until the vegetables have softened.
- Stir in the paprika, cumin, red pepper flakes (if using), salt, and black pepper. Cook for another 2 minutes until fragrant. Remove from heat and stir in the fresh parsley.
- Place the whole wheat pitas on the prepared baking tray. Evenly spread the beef and vegetable mixture over each pita.
- Sprinkle the reduced-fat mozzarella cheese over the beef and vegetable topping.
- Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly and the pita edges are lightly golden.
- Serve immediately with a dollop of fat-free Greek yogurt on the side.
