Ingredients
- 8 oz lean beef sirloin (finely diced)
- 1 tbsp low-sodium soy sauce
- 1 tsp cornstarch
- 1/2 tsp ginger powder
- 2 tbsp mandarin orange juice
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sriracha (optional, for a hint of spice)
- 1/2 cup finely diced water chestnuts (canned, drained)
- 1/2 cup shredded carrots
- 6 large butter lettuce leaves
- 1/4 cup chopped green onions
- 1 tsp sesame seeds
Instructions
- Prep: Preheat air fryer to 375°F (190°C). In a bowl, toss the finely diced beef sirloin with low-sodium soy sauce, cornstarch, and ginger powder until well coated.
- Air Fry Beef: Place the beef in a single layer in the air fryer basket. Air fry for 10-12 minutes, shaking the basket halfway through, until crispy and browned.
- Prepare Glaze: While the beef cooks, whisk together the mandarin orange juice, rice vinegar, honey, and sriracha (if using) in a small saucepan. Bring to a gentle simmer over medium heat on the hob, then reduce heat and cook for 2-3 minutes until slightly thickened.
- Combine: In a medium bowl, combine the crispy beef, water chestnuts, and shredded carrots. Pour the mandarin orange glaze over the mixture and toss gently to coat.
- Assemble Wraps: Spoon the beef mixture into the butter lettuce leaves. Garnish with chopped green onions and a sprinkle of sesame seeds.
- Serve: Arrange the lettuce wraps on a platter and serve immediately.
