Ingredients
- 400g ground lamb (80/20 fat content)
- 2 cloves garlic, minced
- 1/4 cup finely chopped fresh parsley
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional, for a kick)
- Salt and freshly ground black pepper to taste
- 1/2 cup full-fat Greek yogurt (plain, unsweetened, strained to remove excess whey)
- 1/4 cup grated cucumber (deseeded and squeezed dry)
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh lemon juice
- 1 tbsp olive oil
- 4 small bamboo skewers (soaked if air frying)
Instructions
- Prep: In a medium bowl, combine the ground lamb, minced garlic, parsley, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix until just combined, being careful not to overmix. Form the mixture into 8 small sausage-like shapes and thread two onto each bamboo skewer.
- For the Tzatziki: In a separate small bowl, combine the strained Greek yogurt, grated cucumber, chopped dill, lemon juice, salt, and pepper. Mix well and set aside.
- Preheat your air fryer to 190°C (375°F). Lightly brush or spray the lamb kofta skewers with olive oil.
- Place the skewers in a single layer in the air fryer basket. Air fry for 12-15 minutes, flipping halfway through, until the kofta are golden brown and cooked through (internal temperature 71°C/160°F).
- Serve the hot, crispy lamb kofta skewers immediately with a generous dollop of the keto tzatziki dip on the side.
