Ingredients
- 250g lamb mince
- 1/4 cup almond flour
- 1/4 onion, finely chopped
- 1 green chili, deseeded and minced
- 1 tsp ginger-garlic paste
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp turmeric powder
- Salt and pepper to taste
- 2 cups mixed salad greens
- 1/2 cup cucumber, diced
- 1/4 cup fresh mint leaves, chopped
- 1/2 cup full-fat Greek yogurt
- 1 tbsp lemon juice
Instructions
- Prep: Preheat your air fryer to 180°C (350°F). In a bowl, combine lamb mince, almond flour, chopped onion, green chili, ginger-garlic paste, cumin, coriander, turmeric, salt, and pepper. Mix well.
- Form the mixture into 4-6 seekh kebabs.
- Lightly spray the air fryer basket with oil and cook the kebabs for 12-15 minutes, flipping halfway, until cooked through and lightly browned.
- While kebabs are cooking, prepare the raita dressing: In a small bowl, whisk together Greek yogurt, chopped mint leaves, and lemon juice. Season with salt and pepper to taste.
- Assemble the salad bowls: Divide the mixed salad greens and diced cucumber between two bowls.
- Once the kebabs are cooked, let them cool slightly. Slice them into bite-sized pieces and arrange over the salad greens.
- Drizzle generously with the mint raita dressing and serve immediately.
- Top tip: For an extra kick, add a pinch of cayenne pepper to the kebab mixture.
