Ingredients
- 300g firm tofu, pressed and crumbled
- 2 tbsp olive oil
- 40g sun-dried tomatoes (oil-packed), drained and chopped
- 30g Kalamata olives, pitted and sliced
- 1 clove garlic, minced
- 1 tbsp fresh oregano, chopped
- 1 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- Salt and black pepper to taste
- 2 slices keto sesame bread (e.g., flax and almond flour based, approx. 60 calories per slice)
Instructions
- Prep: Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
- Heat olive oil in a non-stick pan over medium heat. Add the crumbled tofu and cook for 5-7 minutes, stirring occasionally, until it starts to brown lightly.
- Add the sun-dried tomatoes, Kalamata olives, minced garlic, oregano, and parsley to the pan. Cook for another 2-3 minutes, stirring to combine.
- Remove from heat and stir in the lemon juice. Season with salt and black pepper to taste. Mash lightly with a fork to your desired consistency.
- Place the keto sesame bread slices on the prepared baking sheet. Toast in the preheated oven for 5-7 minutes, or until golden and crispy.
- Evenly spread the Mediterranean tofu mash over the toasted keto sesame bread slices. Serve immediately.
