Ingredients
- 2 (4oz/113g each) salmon fillets
- 2 tbsp olive oil (divided)
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Pinch of cayenne pepper
- Salt and black pepper to taste
- 2 cups riced cauliflower
- 1/4 red onion, finely diced
- 1/2 red bell pepper, finely diced
- 1/4 cup fresh mint leaves, chopped
- 1 clove garlic, minced
- 1/2 cup full-fat Greek yogurt
- 1 tbsp lemon juice
Instructions
- Prep: Pat salmon fillets dry. In a small bowl, mix 1 tbsp olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub generously over the salmon.
- Air Fry Salmon: Preheat air fryer to 400°F (200°C). Air fry salmon for 10-12 minutes, or until cooked through and flaky, with a crispy skin.
- Sauté Cauliflower Rice: While salmon cooks, heat the remaining 1 tbsp olive oil in a pan over medium heat. Add diced red onion and red bell pepper, sauté for 3-4 minutes until softened.
- Add Cauliflower Rice: Stir in the riced cauliflower, cooking for another 5-7 minutes until tender. Season with salt and pepper.
- Prepare Yogurt Sauce: In a small bowl, combine Greek yogurt, chopped mint, minced garlic, lemon juice, and a pinch of salt and pepper. Mix well.
- Assemble: Divide the spiced cauliflower rice between two plates. Top each with a crispy air-fried salmon fillet. Drizzle generously with the minted yogurt sauce.
