Ingredients
- 2 small turkey drumsticks (approx. 200g each, skin removed)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 0.5 tsp ground cumin
- 0.5 tsp ground coriander
- 0.25 tsp turmeric
- Pinch of cayenne pepper (optional)
- Salt and black pepper to taste
- 1 medium head cauliflower (approx. 500g)
- 1 tbsp olive oil
- 0.5 red onion, finely diced
- 1 clove garlic, minced
- 0.25 cup vegetable broth
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh mint, chopped
- 1 tbsp lemon juice
Instructions
- Prep: Pat turkey drumsticks dry. In a small bowl, mix 1 tbsp olive oil, smoked paprika, cumin, coriander, turmeric, cayenne pepper (if using), salt, and pepper. Rub this spice mix generously over the turkey drumsticks. Chop the cauliflower into florets and pulse in a food processor until it resembles couscous. Finely dice the red onion and mince the garlic.
- Air Fry Turkey: Preheat air fryer to 190°C (375°F). Place the seasoned turkey drumsticks in the air fryer basket. Cook for 20-25 minutes, flipping halfway, until cooked through and golden brown. Internal temperature should reach 74°C (165°F).
- Sauté Aromatics: While turkey cooks, heat 1 tbsp olive oil in a large pan or hob over medium heat. Add the diced red onion and sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
- Cook Cauliflower Couscous: Add the pulsed cauliflower to the pan with the aromatics. Pour in the vegetable broth, stir well, and cover. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender-crisp.
- Finish Couscous: Remove lid, stir in chopped parsley, mint, and lemon juice. Season with salt and pepper to taste. Fluff with a fork.
