Ingredients
- 300g salmon fillet, cut into 1-inch cubes
- 2 tbsp Korean BBQ sauce (low sugar)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1/2 tsp ginger, grated
- 100g kimchi, roughly chopped
- 50g red cabbage, shredded
- 2 spring onions, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp honey
- 1/2 tsp sesame seeds
Instructions
- Prep: Pat salmon dry and thread onto skewers. In a bowl, whisk together Korean BBQ sauce, soy sauce, sesame oil, minced garlic, and grated ginger. Marinate salmon for 10-15 minutes.
- Grill the salmon skewers over medium-high heat for 3-4 minutes per side, or until cooked through and lightly charred. Alternatively, air fry at 200°C for 8-10 minutes, flipping halfway.
- While salmon cooks, prepare the kimchi slaw. In a medium bowl, combine chopped kimchi, shredded red cabbage, and thinly sliced spring onions.
- In a small bowl, whisk together rice vinegar and honey for the dressing.
- Pour the dressing over the kimchi slaw and toss gently to combine.
- Serve the grilled salmon skewers immediately with the refreshing kimchi slaw.
- Garnish with sesame seeds.
