Ingredients
- 300g pork carnitas (pre-cooked, shredded)
- 4 small corn tortillas
- 1/2 cup fresh pineapple, finely diced
- 1/4 red onion, finely diced
- 1 tbsp fresh cilantro, chopped
- 1/2 lime, juiced
- Pinch of salt
Instructions
- Prep: Preheat your air fryer to 375°F (190°C).
- Place the shredded pork carnitas in a single layer in the air fryer basket. Air fry for 10-12 minutes, shaking the basket halfway through, until crispy and heated through.
- While the pork is crisping, warm the corn tortillas. You can do this on a dry hob pan for about 30 seconds per side until pliable, or microwave for 15-20 seconds.
- In a small bowl, combine the diced pineapple, red onion, chopped cilantro, lime juice, and a pinch of salt to make the salsa.
- Assemble the tacos: Divide the crispy pork carnitas evenly among the warmed tortillas.
- Spoon the pineapple salsa generously over the pork in each taco.
