Microwave Miso Egg Drop Soup with Green Onion

Ingredients
- 4 cups (960ml) vegetable broth
- 2 tablespoons (30g) white miso paste
- 2 large eggs, whisked
- 2 green onions, thinly sliced
- 1 teaspoon soy sauce
- 1/2 teaspoon ginger powder
Instructions
- Prep: Whisk the eggs in a small bowl and slice the green onions.
- In a large microwave-safe bowl (at least 6-cup capacity), combine the vegetable broth, miso paste, soy sauce, and ginger powder. Whisk until the miso paste is dissolved.
- Microwave on high for 4-5 minutes, or until the broth is very hot and simmering. Carefully remove from the microwave.
- Slowly pour the whisked eggs into the hot broth in a thin stream, stirring continuously with a fork or chopsticks to create delicate egg ribbons.
- Let the soup sit for 1 minute to allow the egg to fully cook.
- Stir in the sliced green onions.
- Ladle into two bowls and serve immediately.
