Speedy Beef & Corn Tostadas

Ingredients
- 4 small corn tortillas (approx 100g)
- 150g lean ground beef (10% fat or less)
- 100g fresh or frozen corn kernels
- 100g diced canned tomatoes, drained
- 2 tbsp Greek yogurt (plain, 0% fat)
- 1 tsp olive oil
- 1/2 tsp chili powder
- 1/4 tsp cumin
- Salt and pepper to taste
- Optional: fresh cilantro for garnish
Instructions
- Prep: Preheat your air fryer to 180°C (350°F). Lightly brush both sides of the corn tortillas with a tiny amount of olive oil (from the 1 tsp amount) and air fry for 4-6 minutes, or until crispy. Alternatively, bake in an oven at 200°C (400°F) for 8-10 minutes. Set aside.
- Heat the remaining olive oil in a non-stick pan over medium-high heat on the hob. Add the ground beef and cook, breaking it up with a spoon, until browned (about 5-7 minutes).
- Drain any excess fat from the beef.
- Stir in the chili powder, cumin, salt, and pepper. Cook for 1 minute more until fragrant.
- Add the corn kernels and drained diced tomatoes to the beef mixture. Cook for another 3-5 minutes, allowing the flavors to meld and the corn to heat through.
- Divide the beef mixture evenly among the crispy tostada shells.
- Top each tostada with a dollop of Greek yogurt.
- Garnish with fresh cilantro if desired.
