Ingredients
- 8 oz lean beef sirloin, cut into 1-inch cubes
- 2 large eggs
- 1 cup mixed greens
- 1/4 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/2 bell pepper (any color), thinly sliced
- 1 tbsp lime juice
- 1 tbsp olive oil (for dressing)
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- Wooden skewers (soaked in water for 30 minutes if grilling)
Instructions
- Prep: Preheat your grill to medium-high heat. If using wooden skewers, ensure they have been soaked.
- Season the beef cubes with oregano, smoked paprika, salt, and pepper. Thread the beef onto the skewers.
- Grill the beef skewers for 3-4 minutes per side, or until cooked to your desired doneness. Keep an eye on them to prevent overcooking.
- While the beef is grilling, bring a small pot of water to a gentle simmer for the poached eggs. Add a splash of vinegar (optional) to the water. Carefully crack each egg into the simmering water and poach for 3-4 minutes for a runny yolk.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to create the dressing.
- Combine the mixed greens, cherry tomatoes, red onion, and bell pepper in a separate bowl. Drizzle with the lime vinaigrette and toss gently to coat.
- Assemble the plates with the grilled beef skewers, poached eggs, and a generous portion of the zesty salad.
