Ingredients
- 4 oz (115g) extra lean turkey mince (99% fat-free)
- 1/4 tsp smoked paprika
- 1/4 tsp garlic powder
- Salt and freshly ground black pepper to taste
- 2 wholewheat frozen waffles (approx. 70g each)
- 1/4 cup (28g) grated low-fat cheddar cheese
- 2 tbsp skim milk
- 1/4 tsp baking powder
- 1 large egg white
- 1 tbsp finely chopped fresh chives
Instructions
- Prep: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. In a small bowl, combine turkey mince with smoked paprika, garlic powder, salt, and pepper. Mix well.
- Bake the Turkey Mince: Spread the seasoned turkey mince evenly on the prepared baking sheet. Bake for 10-12 minutes, stirring halfway, until fully cooked and crispy. Alternatively, air fry at 375°F (190°C) for 8-10 minutes, shaking basket halfway.
- Prepare Waffle Batter: While the turkey bakes, break the wholewheat waffles into small pieces and place them in a blender or food processor. Add low-fat cheddar, skim milk, baking powder, and egg white. Blend until a thick, uniform batter forms.
- Cook Cheddar Waffles: Heat a non-stick pan over medium heat. Pour half of the waffle batter into the pan for each waffle, spreading slightly to form two pancakes/waffles. Cook for 3-4 minutes per side, until golden brown and cooked through.
- Assemble: Carefully transfer the cooked cheddar waffles to serving plates. Top generously with the crispy oven-baked turkey mince.
- Garnish: Sprinkle with fresh chives just before serving.
