Ingredients
- 200g Extra lean ground beef (less than 5% fat)
- 2 Large whole wheat tortillas
- 40g Low-fat feta cheese, crumbled
- 2 cups Fresh baby spinach
- 4 Sun-dried tomatoes (dry-packed or rinsed of oil), chopped
- 1/2 tsp Smoked paprika (Pimentón)
- 1/4 tsp Garlic powder
- Salt and black pepper to taste
- Cooking oil spray (1-second spray)
Instructions
- Prep: Finely chop the sun-dried tomatoes and weigh out the lean beef and feta cheese.
- Set a non-stick pan over medium-high heat on the hob and lightly mist with cooking spray.
- Add the lean beef to the pan, breaking it up with a spatula; season with smoked paprika, garlic powder, salt, and pepper. Cook for 6-8 minutes until browned.
- Stir in the chopped sun-dried tomatoes and fresh spinach, cooking for 1 minute until the spinach is just wilted. Remove from heat.
- Warm the tortillas in the microwave for 15 seconds to make them pliable.
- Divide the beef and vegetable mixture evenly between the two tortillas, then top each with 20g of crumbled low-fat feta.
- Fold the sides of the tortillas inward and roll tightly to form a wrap.
- Optional: Briefly place the wraps back in the hot pan for 30 seconds per side to crisp the exterior.
