Fiery 'Nduja & Avocado Brunch Toast

Ingredients
- 2 slices whole grain sourdough bread (about 100g total)
- 50g 'nduja
- 1 ripe avocado (about 150g edible portion)
- 4 large eggs
- 1 tsp olive oil
- Pinch of flaky sea salt
- Freshly ground black pepper
- Optional: red pepper flakes for extra heat
Instructions
- Prep: Preheat a small frying pan over medium heat. Toast the sourdough bread in a toaster, oven, or under the grill until golden and crispy.
- Spread the 'nduja evenly over the two slices of toasted sourdough.
- Halve, pit, and scoop out the avocado flesh. Mash it lightly with a fork and spread it over the 'nduja on each toast slice.
- Heat 1 tsp olive oil in the frying pan. Crack two eggs into the pan and fry until the whites are set and the yolks are still runny, about 2-3 minutes per egg. Repeat for the remaining two eggs.
- Carefully place two fried eggs on top of each avocado 'nduja toast.
- Season with a pinch of flaky sea salt and freshly ground black pepper. Add red pepper flakes if desired.
