Crispy Millet & Date Energy Bites with Berry Yogurt

Ingredients
- 1/2 cup (100g) foxtail millet, cooked
- 1/4 cup (40g) Medjool dates, pitted and finely chopped
- 1 tbsp (15g) unsweetened shredded coconut
- 1/2 tsp cardamom powder
- Pinch of salt
- 1/2 cup (75g) mixed berries (fresh or frozen)
- 1 tbsp (15ml) water
- 1 tsp (5ml) lemon juice
- 1 cup (240g) plain low-fat Greek yogurt
- 1 tbsp (5g) chopped pistachios (for garnish)
Instructions
- Prep: Preheat oven to 180°C (350°F). Line a baking tray with parchment paper. Cook millet according to package instructions, then let it cool slightly.
- Combine the cooked millet, chopped dates, shredded coconut, cardamom powder, and a pinch of salt in a bowl. Mix well until a sticky dough forms.
- Roll the mixture into 10-12 small, bite-sized balls (about 15-20g each) and flatten them slightly into discs.
- Arrange the millet bites on the prepared baking tray and bake for 12-15 minutes, or until lightly golden and crispy at the edges. Alternatively, air fry at 160°C (320°F) for 8-10 minutes.
- While the bites are baking, prepare the berry compote: In a small saucepan over medium heat, combine mixed berries, 1 tbsp water, and lemon juice. Simmer for 5-7 minutes, gently mashing the berries, until thickened. Let cool slightly.
- Divide the low-fat Greek yogurt between two bowls. Top each with 5-6 crispy millet & date bites, half of the berry compote, and a sprinkle of chopped pistachios.
- Serve immediately and enjoy your wholesome, flavorful brunch!
