Ingredients
- 200g Prawns, peeled and deveined
- 1 tbsp Olive Oil
- 1 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- Pinch of Cayenne Pepper
- 2 slices (approx. 80g) Sourdough Bread
- 1 ripe Avocado
- 50g Feta Cheese, crumbled
- 1/4 cup Fresh Cilantro, chopped
- Lime wedges, for serving
- Salt and Black Pepper to taste
Instructions
- Prep: Pat the prawns dry. In a bowl, toss the prawns with olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper.
- Cook the prawns: Heat a non-stick pan over medium-high heat. Add the seasoned prawns and cook for 2-3 minutes per side, until pink and opaque.
- Toast the bread: While the prawns are cooking, toast the sourdough bread in the oven, air fryer, or grill until golden brown and crispy.
- Prepare the avocado mash: In a small bowl, mash the avocado with a fork. Season with salt and pepper.
- Assemble the toasts: Spread the mashed avocado evenly over the toasted sourdough bread.
- Top the toasts: Divide the cooked smoked paprika prawns evenly over the avocado. Sprinkle with crumbled feta cheese and fresh cilantro.
- Serve immediately with lime wedges on the side.
