Ingredients

- 1 tsp olive oil
- 1 ripe mango, diced
- 0.25 red onion, finely diced
- 1 tbsp chopped fresh cilantro
- 1 tbsp lime juice (for salsa)
- 100g plain Greek yogurt (0% fat)
- 1 tbsp lime juice (for yogurt swirl)
- 0.5 tsp honey or maple syrup (optional, for yogurt)
Instructions
- Prep: Preheat your air fryer to 200°C (390°F). In a medium bowl, toss the chicken pieces with cornstarch, paprika, cayenne pepper, garlic powder, salt, and black pepper until evenly coated. Drizzle with 1 tsp olive oil.
- Air Fry Chicken: Arrange the seasoned chicken in a single layer in the air fryer basket. Cook for 12-15 minutes, shaking the basket halfway through, until golden brown and crispy, and cooked through (internal temperature 74°C/165°F).
- Prepare Mango Salsa: While chicken cooks, combine the diced mango, finely diced red onion, chopped cilantro, and 1 tbsp lime juice in a small bowl. Stir gently to combine.
- Make Lime Yogurt Swirl: In another small bowl, whisk together the Greek yogurt, 1 tbsp lime juice, and optional honey/maple syrup until smooth.
