Chicken & Avocado 'Sushi' Rolls with Cauliflower Rice

Ingredients
- 1.5 cups (approx. 200g) cauliflower florets
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1/2 tsp erythritol or preferred low-carb sweetener
- 1/4 tsp salt
- 4 oz cooked chicken breast, shredded or finely diced
- 1/2 ripe avocado, thinly sliced
- 2 sheets nori seaweed
- 1/4 cup cucumber, julienned
- 2 tbsp mayonnaise (sugar-free, low-carb)
- 1 tsp sriracha (optional, for spicy mayo)
- Sesame seeds for garnish
Instructions
- Prep: Preheat your oven to 400°F (200°C). Roughly chop the cauliflower florets.
- Roast the cauliflower: Spread the cauliflower on a baking sheet and roast for 15-20 minutes, or until tender and lightly browned. Alternatively, steam or microwave until tender. Transfer to a food processor and pulse until it resembles rice. Avoid over-processing or it will become mushy.
- Season the 'rice': In a bowl, combine the cauliflower 'rice' with rice vinegar, erythritol, and salt. Mix well and let cool slightly.
- Prepare the filling: In a small bowl, mix the cooked chicken with 1 tbsp of low-carb mayonnaise. If making spicy mayo, combine the remaining 1 tbsp mayonnaise with sriracha.
- Assemble the rolls: Lay one sheet of nori on a bamboo sushi mat (or a clean, damp kitchen towel). Evenly spread half of the cauliflower 'rice' over the nori, leaving a 1-inch border at the top. Arrange half of the chicken mixture, avocado slices, and cucumber strips in a line across the center of the rice.
- Roll the 'sushi': Carefully roll the nori tightly from the bottom, using the mat to help shape it. Moisten the top edge of the nori with a little water to seal. Repeat with the second sheet of nori.
- Slice and serve: Using a sharp, damp knife, slice each roll into 6-8 pieces. Garnish with sesame seeds and serve with spicy mayo if desired.
- Top tip: For extra flavor, toast the nori lightly over a gas hob flame for a few seconds before assembling the rolls.
