Ingredients
- 4 oz (approx 113g) boneless, skinless chicken breast
- 2 slices low-carb bread (approx 60-70 calories per slice)
- 1 ripe avocado
- 2 tbsp crumbled feta cheese
- 1 tbsp fresh lemon juice
- 1 tbsp extra virgin olive oil
- 1/4 tsp dried oregano, plus extra for garnish
- Salt and black pepper to taste
Instructions
- Prep: Preheat your grill or air fryer to medium-high heat (around 375°F/190°C). Season the chicken breast with salt, pepper, and a pinch of oregano.
- Grill or air fry the chicken for 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C). Once cooked, let it rest for a few minutes, then dice it into small, bite-sized pieces.
- While the chicken cooks, toast the low-carb bread until golden and crisp. This can be done in a toaster, oven, or air fryer.
- In a medium bowl, mash the avocado with a fork. Add the lemon juice, olive oil, and the remaining 1/4 tsp oregano. Mix well until combined but still a bit chunky. Season with salt and pepper to taste.
- Gently fold in the crumbled feta cheese and the diced chicken into the avocado mixture.
