Ingredients
- 250g Ground Turkey (15% fat)
- 150g Cremini mushrooms, sliced
- 40g Almond flour (panade for meatballs)
- 1/2 tsp Dried oregano
- 1/2 tsp Garlic powder
- 1/4 cup Fresh parsley, chopped
- 2 tbsp Parmesan cheese, grated
- 2 tbsp Olive oil (for skillet)
- 1 cup Fresh spinach
- Salt and black pepper to taste
Instructions
- Prep: Combine ground turkey, almond flour, parmesan, oregano, garlic powder, and half the parsley in a bowl; roll into 12 small meatballs.
- Place the meatballs in the air fryer basket and cook at 200°C (400°F) for 10-12 minutes until golden brown and cooked through.
- While meatballs cook, heat olive oil in a skillet over medium-high heat on the hob.
- Add the sliced mushrooms to the skillet and sauté for 6-8 minutes until the liquid has evaporated and they are deeply browned.
- Deglaze the pan with a splash of water, then stir in the spinach until just wilted.
- Add the air-fried meatballs to the skillet and toss everything together to coat in the mushroom juices.
- Season with salt and pepper to taste and garnish with the remaining fresh parsley.
- Top tip: For an extra keto fat boost, serve with a dollop of pesto or a sprinkle of extra parmesan cheese right before eating!
