Ingredients
- 4 oz white fish fillets (e.g., cod, snapper)
- 1 tbsp olive oil
- 1/2 tsp Caribbean jerk seasoning (sugar-free)
- Pinch of sea salt
- Pinch of black pepper
- 2 large eggs
- 2 tbsp almond flour
- 1/2 tsp baking powder
- 50g full-fat cream cheese, softened
- 1 tbsp fresh chives, finely chopped
- 1 tbsp fresh parsley, finely chopped
- 1 clove garlic, minced
- 1/4 tsp onion powder
- 1/2 tsp lime juice
Instructions
- Prep: Pat the white fish fillets dry with paper towels. In a small bowl, combine olive oil, jerk seasoning, salt, and pepper. Rub the mixture over both sides of the fish. Preheat air fryer to 375°F (190°C).
- For the Keto Rounds: In a separate bowl, whisk together eggs, almond flour, and baking powder until smooth. Heat a lightly oiled non-stick pan over medium-low heat. Pour half of the batter to form a round, cook for 2-3 minutes per side until golden and set. Repeat with the remaining batter to make two rounds.
- While the rounds cook, place the seasoned fish in the air fryer basket. Air fry for 10-12 minutes, or until cooked through and flaky, flipping halfway.
- For the Herbed Cream Cheese: In a small bowl, combine softened cream cheese, chopped chives, chopped parsley, minced garlic, onion powder, and lime juice. Mix well until smooth and evenly combined.
- Once the fish is cooked, carefully flake it into smaller pieces.
- To assemble, spread a generous amount of herbed cream cheese onto each keto round. Top with the flaked air-fried white fish.
