Ingredients
- 6 Large Eggs
- 100g Fresh Spinach, roughly chopped
- 80g Feta Cheese, crumbled
- 30ml Heavy Cream
- 1 tbsp Fresh Parsley, finely chopped
- 1 tsp Dried Oregano
- 1 tbsp Olive Oil (for sautéing and greasing)
- 1/2 tsp Garlic Powder
- Salt and Black Pepper to taste
- 50g Mixed Salad Greens (side serving)
Instructions
- Prep: Preheat your oven to 190°C (375°F) and lightly grease 6 slots of a muffin tin with a little olive oil.
- Place a pan over medium heat with a drizzle of olive oil and sauté the chopped spinach for 2 minutes until wilted; squeeze out any excess moisture.
- In a large bowl, whisk the eggs, heavy cream, parsley, oregano, garlic powder, salt, and pepper until well combined.
- Distribute the sautéed spinach and crumbled feta evenly among the 6 prepared muffin tin slots.
- Pour the egg mixture over the spinach and feta, filling each slot about 3/4 of the way full.
- Bake in the oven for 18-20 minutes or until the eggs are set and the tops are slightly golden.
- Remove from the oven, let cool for 2 minutes, and serve 3 muffins per person alongside a handful of fresh salad greens.
