  1. Prep: Thinly slice the lamb loin and quarter the bok choy. Mince garlic and grate ginger. Prepare the garlic chili oil by heating 2 tbsp olive oil in a small pan over low heat. Add the minced garlic and 1 tsp red pepper flakes, simmering gently for 5-7 minutes until the garlic is fragrant and slightly golden. Set aside.
  2. Step 1: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the sliced lamb and sear for 2-3 minutes per side until browned but still slightly pink in the center. Remove the lamb from the pan and set aside.
  3. Step 2: Add the remaining 1 tablespoon of olive oil to the same skillet. Add the minced garlic and grated ginger and sauté for 30 seconds until fragrant.
