Ingredients
- 300g Lean Beef Mince (10-15% fat)
- 200g Fresh Baby Spinach
- 60g Feta Cheese, crumbled
- 1/2 White Onion, finely diced
- 1 clove Garlic, minced
- 1 tbsp Olive Oil
- 1 tsp Ground Cumin
- 1/2 tsp Ground Coriander
- 1/4 tsp Ground Cinnamon
- Salt and black pepper to taste
- 1 tbsp Pine nuts (optional, toasted)
Instructions
- Prep: Finely dice the onion, mince the garlic, and wash the baby spinach; measure out your spices.
- Heat the olive oil in a large skillet or hob-safe pan over medium-high heat.
- Add the diced onion and sauté for 3-4 minutes until translucent, then stir in the garlic and cook for another 30 seconds.
- Add the beef mince to the pan, breaking it up with a spatula, and cook until browned and fully cooked through.
- Stir in the cumin, coriander, cinnamon, salt, and pepper, ensuring the meat is evenly coated in the spices.
- Add the baby spinach in handfuls, stirring constantly until the leaves are wilted and the excess moisture has evaporated.
- Remove from heat, portion into two bowls, and top with the crumbled feta cheese and toasted pine nuts.
