Ingredients
- 300g lean ground pork
- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 0.5 tsp ground coriander
- 0.5 tsp smoked paprika
- 0.25 tsp cayenne pepper (optional)
- Salt and black pepper to taste
- 8 large lettuce leaves (e.g., butter lettuce or romaine)
- 0.5 cup pomegranate seeds
- 30g crumbled paleo "feta" (e.g., made from almonds or cashews, or omit for strict paleo/dairy-free)
Instructions
- Prep: Dice the onion, mince the garlic, and crumble the paleo "feta".
- Heat olive oil in a large pan or skillet over medium-high heat. Add the ground pork and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).
- Drain any excess fat from the pork.
- Add the diced onion and minced garlic to the pan with the pork. Cook until the onion softens (about 3-4 minutes).
- Stir in the cumin, coriander, paprika, cayenne pepper (if using), salt, and black pepper. Cook for another 1-2 minutes until fragrant.
- Spoon the spiced pork mince into the lettuce cups. Top each with pomegranate seeds and crumbled paleo "feta".
