Smoked Salmon & Spinach "Eggs Benedict" Smoothie Bowl

Ingredients
- 4 oz (113g) smoked salmon
- 2 cups (60g) fresh spinach
- 1/2 ripe avocado
- 1/4 cup full-fat Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1/4 tsp smoked paprika
- Pinch of cayenne pepper
- 1/2 cup ice cubes
- Salt and freshly ground black pepper to taste
- 2 tbsp chopped chives, for garnish
- 2 slices (50g) whole-wheat toast, for serving (optional)
Instructions
- Prep: Roughly chop the smoked salmon and spinach. Cut the avocado in half and scoop out the flesh.
- Combine all ingredients (smoked salmon, spinach, avocado, Greek yogurt, lemon juice, Dijon mustard, smoked paprika, cayenne pepper, ice cubes, salt, and pepper) in a high-speed blender.
- Blend until completely smooth and creamy. If the smoothie is too thick, add a tablespoon of water or almond milk at a time until desired consistency is reached.
- Taste and adjust seasonings as needed. If you prefer a more pronounced "hollandaise" flavor, add a tiny bit more Dijon or lemon juice.
- Pour the smoothie into two serving bowls.
- Garnish each bowl with chopped chives. Serve immediately, optionally with a side of whole-wheat toast for dipping.
