Spicy Crispy Korean Beef Noodles

Ingredients
- 150g lean beef sirloin, thinly sliced
- 100g dried ramen noodles
- 1 tbsp low-sodium soy sauce
- 1 tbsp gochujang (Korean chili paste)
- 1 tsp gochugaru (Korean chili powder)
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1/2 inch fresh ginger, grated
- 1 cup mixed vegetables (e.g., bell peppers, carrots, spinach)
- 1/2 red onion, thinly sliced
- 2 tbsp cornstarch
- Cooking spray
- Chopped spring onions and sesame seeds for garnish
Instructions
- Prep: Thinly slice beef, mince garlic, grate ginger, and chop vegetables. Whisk together soy sauce, gochujang, gochugaru, rice vinegar, sesame oil, garlic, and ginger to create the sauce.
- Toss the thinly sliced beef with cornstarch until coated.
- Lightly coat a pan with cooking spray and heat over medium-high heat on the hob. Air fry the beef for 8-10 minutes at 200°C (400°F) until crispy, or pan-fry until golden brown and crispy.
- Meanwhile, cook ramen noodles according to package directions. Drain and set aside.
- In the same pan, lightly coat with cooking spray and sauté the red onion and mixed vegetables for 3-5 minutes until tender-crisp.
- Add the cooked noodles and the prepared sauce to the pan with the vegetables. Toss to combine.
- Stir in the crispy beef.
- Divide into two bowls and garnish with chopped spring onions and sesame seeds.
