Ingredients
- 2 cans (5oz) high-quality Albacore tuna, drained
- 1/4 cup Greek yogurt (plain) or light mayo
- 1 tbsp Dijon mustard
- 1 medium cucumber, sliced into thin coins
- 1 large ripe avocado, sliced into wedges
- 1/4 cup pickled red onions
- 2 tbsp capers, drained
- 1 tbsp fresh dill, chopped
- 1 tsp lemon zest plus a squeeze of juice
- 1 cup wild arugula
- 1/2 tsp red pepper flakes (optional)
- Flaky sea salt and black pepper to taste
Instructions
- Prep: Flake the tuna into a bowl and mix with Greek yogurt, mustard, lemon zest, juice, and chopped dill.
- Season the tuna mixture with a pinch of salt and plenty of cracked black pepper.
- On two large dinner plates, create a vibrant base layer using the wild arugula and cucumber coins.
- Scoop generous portions of the tuna salad into the center of the greens.
- Fan out the avocado wedges around the tuna and top with pickled red onions and capers.
