Anda Bhurji with Spinach

Ingredients
- 4 large eggs
- 1 tbsp olive oil
- 1/2 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 inch ginger, grated
- 1/2 green chili, finely chopped (optional)
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/4 tsp garam masala
- 2 cups fresh spinach, roughly chopped
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Prep: Whisk the eggs in a bowl with a pinch of salt. Chop the onion, mince garlic, grate ginger, and chop green chili and spinach.
- Heat olive oil in a non-stick pan over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes.
- Add minced garlic, grated ginger, and green chili (if using). Sauté for another minute until fragrant.
- Stir in cumin powder, coriander powder, turmeric powder, and garam masala. Cook for 30 seconds, stirring constantly, until aromatic.
- Add the chopped spinach to the pan. Cook until it wilts completely, about 2-3 minutes.
- Pour the whisked eggs into the pan. Scramble gently with a spatula until the eggs are cooked through but still moist and fluffy.
- Season with salt to taste. Garnish with fresh cilantro.
- Serve immediately with a side of whole wheat toast or roti (not included in calorie count).
