Spicy Indian Omelette with Onion & Coriander

Ingredients
- 3 large eggs
- 1/4 cup finely chopped red onion
- 2 tablespoons fresh coriander, chopped
- 1/2 green chilli, deseeded and finely minced (or to taste)
- 1/4 teaspoon turmeric powder
- Pinch of salt
- Pinch of black pepper
- 1 teaspoon olive oil
- 1 slice whole wheat toast (about 30g)
Instructions
- Prep: Finely chop the red onion, fresh coriander, and deseed and mince the green chilli. Whisk the eggs in a bowl with turmeric powder, salt, and pepper until light and frothy.
- Heat olive oil in a non-stick pan (hob) over medium heat.
- Add the chopped red onion and green chilli to the pan and sauté for 2-3 minutes until softened and fragrant.
- Pour the whisked eggs into the pan over the onions and chillies. Swirl gently to distribute evenly.
- As the edges set, sprinkle the fresh coriander over the omelette.
- Cook for 2-3 minutes until the omelette is mostly set but still slightly moist on top. Fold the omelette in half using a spatula.
- Cook for another minute until golden brown on both sides and cooked through. Toast the whole wheat bread.
- Serve the spicy Indian omelette immediately with the whole wheat toast on the side.
