Crispy Pork Bacon & Bean Tostadas

Ingredients
- 4 corn tostada shells (pre-baked)
- 60g pork bacon (approx. 4 strips)
- 1/2 cup (120g) canned refried pinto beans
- 1 tbsp olive oil
- 2 large eggs
- 1/4 cup (30g) crumbled cotija cheese
- 1/4 cup salsa or pico de gallo (optional, for topping)
- Salt and black pepper to taste
Instructions
- Prep: Preheat air fryer to 375°F (190°C). Lay bacon strips in a single layer in the air fryer basket. In a small saucepan, gently heat the refried beans over low heat, stirring occasionally.
- Cook bacon: Air fry bacon for 8-10 minutes, or until desired crispiness, turning once. Drain on paper towels and crumble.
- Cook eggs: While bacon cooks, heat olive oil in a non-stick pan over medium heat. Crack eggs into the pan and fry sunny-side up, over easy, or scrambled, to your preference.
- Assemble tostadas: Spread a thin layer of warm refried beans on each corn tostada shell.
- Top and serve: Divide the crumbled crispy bacon and cooked eggs evenly among the tostadas. Sprinkle with cotija cheese and a dollop of salsa or pico de gallo if using. Season with salt and pepper.
